1 medium (120g) zucchini, grated
310g corn kernels, drained
125g creamed corn
375mL Carnation Light & Creamy
1½ cups (225g) self-raising flour
Spray oil for cooking
1. In a large bowl, combine zucchini, corn kernels, creamed corn, CARNATION Light & Creamy Cooking Milk and self-raising flour. Mix until it comes together.
2. Heat a large frying pan over medium heat; Spray fry pan with oil drop ¼ cup (60mL) of mixture into pan; cook 2 minutes each side or until golden; repeat with remaining mixture, keep warm and set aside. (should make 12 fritters)
Tip – Serve with combined smashed avocado and finely chopped tomato, if desired.
